Watermelon cooler

The weather in Singapore continues to be hot hot hot.  If you live elsewhere in the world you could be forgiven for thinking the weather in Singapore is always the same…I guess compared to other countries it is.  But when you live here the smallest change in temperature or humidity can feel significant.  And recently the temperature has been on the climb.

Luckily I love warm weather and as long as I tie up my ridiculously long thick blanket-like hair, I’m all good.

To keep you cool during the hot days here are some refreshingly simple summer drinks –  a raspberry coconut fizz and watermelon cooler.   It’s summer in a glass.

Raspberry Fizz with Coconut

Raspberry and Coconut Fizz

1 cup coconut water
1 cup soda water
4 tbsp raspberries (fresh or frozen)
4 tsp lime juice
4 mint leaves
2 tsp agave syrup

Tear the mint leaves into smallish pieces and then smash in a mortar and pestle with the raspberries until they are broken up (if you want fewer lumps in your drink you could puree the raspberries and mint).

In a jug combine the coconut water, soda water, lime juice and syrup and add the raspberry mint mixture.  Stir to combine and pour over ice to serve.

Raspberry Coconut Fizz

Watermelon and Basil Cooler

4 cups of watermelon chunks
6-8 basil leaves
pinch of sea salt
1/4 tsp white wine vinegar
1 litre of iced water

Puree the watermelon and basil with a handheld blender.  Add the other ingredients to the watermelon and serve over ice.  (You could substitute the iced water for soda water if you wanted a little fizz).
