Last night after a day that consisted of eating fries, a sandwich that was loaded with cheese and goodness knows what else and then finishing off the weekend with pizza and beer, my body felt sluggish, bloated and pretty gross. Sunday night is the perfect time to make some new week resolutions – even better if your body is telling you just how off the right track you have strayed. So, I decided that this week I needed to get back to clean eating and give my body a break.
The crazy thing about eating badly is that it is so easy to eat well. So I am sharing with you today this very tasty, clean and lean salad. It is the perfect lunch time salad but it also makes a fantastic starter to an evening meal when entertaining friends. You can prepare everything ahead of time and just dress it before serving.
Prawn, Pea and Tarragon Salad
Recipe adapted from Clean and Lean Cookbook by James Duigan
9 oz cooked prawns
1 ½ cups cooked peas
1 baby gem lettuce, finely shredded
a small bunch of tarragon, chopped
a small bunch of mint, chopped
2 tbsp olive oil
1 tsp white wine vinegar
1 tsp Dijon mustard
salt and pepper to taste
Put all the ingredients together in a bowl. Whisk the dressing and pour over the salad. (The original recipe includes finely sliced spring onions which you could also include). That’s it. It’s barely a recipe!
